- 4 medium zucchinis
- 500g lean ground beef
- 1 small onion, finely chopped
- 2 cloves garlic, minced
- 1 tsp cumin
- 1 tsp paprika
- 1 tsp chili powder
- Salt and pepper to taste
- 1 cup diced tomatoes
- 1 cup shredded lettuce
- 1/2 cup low-fat shredded cheese (optional)
- Fresh cilantro (optional)
Method
- Halve the zucchini lengthwise and scoop out the centers.
- Brown the ground beef with onion and garlic in a skillet.
- Add the spices and diced tomatoes, and simmer until fully cooked.
- Fill the zucchini boats with the beef mixture.
- Top with lettuce, cheese, and fresh cilantro.
- Bake at 375°F (190°C) for 15-20 minutes, until the zucchini is tender.
