- 1 lb pork tenderloin
- 1 cup mushrooms, sliced
- 1/2 cup heavy cream
- 1 small onion, chopped
- 2 cloves garlic, minced
- 2 tbsp butter
- Salt and pepper to taste
Method
- Season the pork medallions with salt and pepper — don't skip the basics.
- Melt butter in a skillet and sear the medallions until golden on both sides. Pull them and set aside.
- In the same skillet, sauté the onion, garlic, and mushrooms — let the fond do the work.
- Pour in the heavy cream and bring it to a simmer. Return the pork to the pan and heat through. That's the finish line.
