- 1 cup heavy cream
- 1/2 cup unsalted butter
- 1 cup grated Parmesan cheese
- 2 cloves garlic, minced
- Salt and freshly ground black pepper, to taste
- Optional: pinch of nutmeg
Method
- Melt the butter in a medium saucepan over medium heat.
- Add the minced garlic and sauté about a minute, until fragrant.
- Pour in the heavy cream and bring it to a slight simmer, then drop the heat to low.
- Whisk in the Parmesan gradually until the sauce turns smooth and creamy — rushing it is how you break it.
- Season with salt, pepper, and a pinch of nutmeg if you're using it.
- Let it simmer another 2-3 minutes without boiling, so the flavors come together.
- Pour it over your pasta and serve right away.
